Are there professions that cannot be taken over by artificial intelligence?

While studying at a conservatory of music in Los Angeles, I was told by a professor that artists and musicians are the only practitioners whose careers cannot be taken over by artificial intelligence. She ardently declared that the imagination, emotion, and spontaneity required of artists means that, although our professions are filled with much uncertainty, we can at least be assured that they will never be appropriated by machines. Creativity, she argued, is a distinctly human virtue. However, as both a pianist and writer, I wanted to test this conviction through story, to see whether, maybe, the intersection of artificial intelligence and human artistry may not be an imaginative impossibility after all.
